      Oct 27 after 2 days of cold soak: 25 Brix, pH 4.08, TA 8.8

      Sorry, I could not get enough clear sample to do a yan test. The sample was taken from the top of a bucket with less than 10% clear liquid on top after two days. The Brix was 24.8 and the pH was 3.97. Similar numbers to the 2016 Syrah.

      Has anyone else done a YAN test? If not what Yan would be a good guess based on previous years experience with this grape/vineyard? Help!

      Robin, Ian is the only one who got a sample of the Syrah for a YAN test. You can go to the 2016 grape forums and find the YAN from previous years. For the Syrah it was 229. However, last year the lab gave us some relatively high YAN’s and we subsequently had some H2S issues. This led us to suspect some of the lab YAN’s were biased high. I am not working with the 2017 Syrah, but I would default to a YAN of 100 in the absence of measured values.
