      Please post your chemistry results for the 2022 Chardonnay by replying to this topic. It would be helpful to others if you include notes on any planned adjustments (e.g., your target Brix and TA).

      I have finished settling my Chardonnay and will be racking off the clear juice this evening. I will post my chemistry results and hopefully YAN in the next day or so.

      Here are my chemistry results:
      Brix 23.6
      pH 3.43
      TA 6.3
      Like Don, I will be adding 0.5 g/L of tartaric. Will leave the Brix as is.

      Yan 56
      .75-1.0 gms/lt added. Quantity ~80-90lts split in large primaries
      Final Numbers pH 3.29 and TA 6.4

        Ron, are you going to bring your Brix down a bit? 25 seems a bit high.

      Hi Dave, Yes I did bring it down slightly. I did a second press the next day with about 2 lts of water left it on the skins over night. This did bring it down to 24.
